Something you have to do is define the Knowledge Craft to a specific crating type (smithing, leather working, Clothing, Jewelry etc....)

There are a lot of Knowledge Skills.  Why not take  Jack-of-All-Trades for this?  Save you on the skill points.  Jack-Of-All-Trades makes all Smarts based skills at a d4 instead of a d4-2.  Which is what you have with the knowedge skills.  And one of the options under the Human Edge Southborn will give you access to another races Novice Edge, with GM permission, take the Goblin Novice Edge, Cleaver Nit- which allows you to spend a benny to gain a d10 wild die on Knowledge based rolls.

Anilar

Jack of all trades does have the draw back, of becoming less and less useful, if you start to want or get smart based skills beyond d4 during advances. As I understand your character, I kinda think you should get human edge, fast learner as a beginning edge. Remove Training and remove a couple of knowledge skills. With fast learner you can quickly with advances get those knowledge skills up, while you level up your other skills too.

And fast learner will also open  up for relatively quickly reach other possibilities, like sorceror or adept. Which will open up for your possibilities during battle, without reducing your characters ability to handle non-combat challenges.

Eldakar: "Venerable" Background edge.  D4 in every skill imaginable.  Mixologist at a d4.  Basket weaving at d4.

This only works at seasoned but: Goblin with 1/2 blood (half human) racial edge.  Novice: min d8 smarts, Clever nit, Jack of All trades, Epic destiny (human edge) for Versatile nit.  Seasoned: Epic Destiny: A Goblin for All occasions: D4 in all skills just like Eldakar venerable edge plus a once a session "I win" button.
